Our pan ready megrim sole are hand prepared, removing the head, cleaned, trimmed the fins, we leave the skin on, and as the name suggests these pan ready fish are ready to cook on the bone. We love it grilled or roasted whole with plenty of butter, olive oil, parsley, bacon lardons, a squeeze of lemon and served with steamed or boiled new potatoes and fresh garden peas mixed with baby broad beans. Megrim sole, is a deep water flat fish which lives on the seabed off the South West coast. It has a beautiful sweet flavour and is highly prized in Spain and Portugal where most of the Cornish catch is exported. One sole is enough for a sharing starter for 2 or a generous main course for 1.
