These are boneless fillet portions from organically farmed salmon. Organic salmon costs more than other farmed salmon and has a more attractive look and taste. Organic salmon is brighter and fuller in colour that conventionally farmed salmon and we tend to find it has a slightly lower fat content. Organic salmon is one of our best selling lines. The fillet portion is cut from the lower end of the fish fillet where the fillet is slightly thinner than the middle where the fillet steaks come from. The difference in thickness is reflected in the price.
