The Patagonian Toothfish, otherwise known as the Chilean sea bass, is a lumbering colossus that can weigh up to 100kg. Due to it's life in frigid Arctic waters, its flesh has a high oil content, which makes it completely delicious! This belly cut also comes from the most oily part of the fish, so it's absolutely packed with flavour. It's a very versatile fish that can take on loads of spices and still it's own, so give it a go!

This fish used to be hugely subjected to illegal fishing. But now, the main stocks seem to be well regulated with six MSC certified fisheries. Ours are MSC certified.
