Patagonian toothfish, otherwise known as Chilean sea bass, is a lovely dense oily fish. It has a great buttery feel with delicate white flakes. It is a resiliant fish that can handle South-East Asian spices. Our Patagonian toothfish come from a fishery on one of the Kerguelen Islands. These cuts are our fillet portions, which tend to be thinner than our fillet steaks. See fish terms for more info.

This fish was once heavily subjected to illegal fishing. But now, the main stocks seem well regulated with six certified MSC fisheries. Ours is MSC certified.
