This is a lumbering colossus (up to 100kgs) of the southern deep with divine white, buttery flesh. It's a low-calorie, protein-dense fish. As it's flesh is so dense, it lends itself well to being cooked any way you wanted and it's not likely to flake apart as you move it around. It's a wonderfully tasty and versatile fish to try new things with.

We also sell Patagonian Toothfish fillet portions, belly steaks, and loin steaks.

Sustainability - our rating 7/10

This fish was once a poster child for illegal fishing. But now, the main stocks seem well regulated with six certified MSC fisheries. Ours in MSC certified.
