Thanks to the size of these massive fish, we are able to get these beautifully thick loin steaks. The Patagionia Toothfish (otherwise known as the Chilean Sea Bass) has divine white, buttery flesh. Since the fish lives out in the the frigid Arctic waters, its flesh becomes oil-rich  and it's difficult to overcook. It's in high demand all over the world. 

We also sell fillet steaks, fillet portions and belly steaks.

This fish was once the poster child for illegal fishing. But now, the main stocks seem well regulated with six certified MSC fisheries. Ours are MSC certified.
