Beef Tartare with Sea Urchin and Miso

Classic beef tartare served with fresh sea urchin roe on top. The creamy sweetness and foie gras-like richness of the uni blends perfectly with the savoury flavour of the beef tartare.

Beef Tartare with Sea Urchin and Miso

Discover with this beef tartare recipe topped with sea urchin the combination of tender beef steak with the foie of sea urchin.

Ingredients

300g fillet of beef

Handful of cornichons

1 tbsp capers

1/2 shallot

1 tbsp parsley, finely chopped

2 sea urchin roe

Cooking steps

Step 1

Finely dice the beef, shallot, capers and cornichons.

Step 2

Combine with the parsley and a good pinch of salt and pepper.

Step 3

Using a metal plating ring divide the mixture between two plates forming a neat circle on each plate.

Step 4

Top with the sea urchin roe and serve immediately.
