Bream Fillets In Garlic Butter

Bream fillets in garlic butter

Serves 2

A charming and simple Spanish recipe that can be used as a second course or for a tapas style meal


  • 2 gilt head bream fillets about 150g each
  • 6 garlic cloves (well, that's how many they use in Spain)
  • 100g/3.5oz butter
  • Splash of olive oil
  • Cup of flour
  • Small bunch of chopped flat leaf parsley
  • Salt and Pepper


  1. In a small pan melt the butter and olive oil, add the garlic cloves and fry on a low heat for 5 - 6 minutes until garlic is browned
  2. Season flour heavily with salt and pepper and dust the bream fillets
  3. Fry fillets in the butter oil for 2-3 minutes each side. Add more butter if required
  4. Remove fillets and arrange on a plate. Pour the garlic butter over the fish fillets and sprinkle with parsley
