Bream fillets in garlic butter
Serves 2
A charming and simple Spanish recipe that can be used as a second course or for a tapas style meal
Ingredients
- 2 gilt head bream fillets about 150g each
- 6 garlic cloves (well, that's how many they use in Spain)
- 100g/3.5oz butter
- Splash of olive oil
- Cup of flour
- Small bunch of chopped flat leaf parsley
- Salt and Pepper
Method
- In a small pan melt the butter and olive oil, add the garlic cloves and fry on a low heat for 5 - 6 minutes until garlic is browned
- Season flour heavily with salt and pepper and dust the bream fillets
- Fry fillets in the butter oil for 2-3 minutes each side. Add more butter if required
- Remove fillets and arrange on a plate. Pour the garlic butter over the fish fillets and sprinkle with parsley
