Cajun coley

Ingredients
- 2 coley fillet steaks
- 1/2 tbsp paprika
- 1/2 tsp cayenne pepper
- 1/2 tsp cumin
- 1/2 tsp dried thyme
- 1/2 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp ground ginger
- 1/4 tsp ground allspice
- 1/4 tsp black pepper
- 1 garlic clove
- sea salt
Method
- Mix all the dried spices together in bowl to make the cajun spice
- Rub the spices into both sides of the fillets
- Heat a drop of olive oil into a frying pan and add the garlic, grated
- After two minutes remove the garlic and increase the heat
- When the pan is hot, place the coley in and cook for 4 mins each side
- The outside will appear 'burnt', it is not. This is the effect of the spices.
- Serve with rice or potatoes with a sprinkle of sea salt to finish
