Cajun coley

Serves 2


  • 2 coley fillet steaks
  • 1/2 tbsp paprika
  • 1/2 tsp cayenne pepper
  • 1/2 tsp cumin
  • 1/2 tsp dried thyme
  • 1/2 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp ground ginger
  • 1/4 tsp ground allspice
  • 1/4 tsp black pepper
  • 1 garlic clove
  • sea salt


  1. Mix all the dried spices together in bowl to make the cajun spice
  2. Rub the spices into both sides of the fillets
  3. Heat a drop of olive oil into a frying pan and add the garlic, grated
  4. After two minutes remove the garlic and increase the heat
  5. When the pan is hot, place the coley in and cook for 4 mins each side
  6. The outside will appear 'burnt', it is not. This is the effect of the spices.
  7. Serve with rice or potatoes with a sprinkle of sea salt to finish
