Caribbean Kingfish Stew

A wonderfully fragrant and full flavoured dish is an absolute breeze to make. Try replacing the Kingfish steaks with Kingfish misshapes to save a little time. This one is guaranteed to be a crowd pleaser.

What you’ll need

  • 2 Yellowtail Kingfish steaks
  • 1 Red pepper
  • 1 Brown onion
  • 2 Garlic cloves
  • 4 Large tomatoes
  • 2 tsp Paprika
  • 2 tsp Cayenne pepper
  • 4 green Birdseye chillies
  • 1 cup Red wine
  • 1 cup Fish stock
  • Parsley
  • Bay leaves
  • Rosemary

Step 1

Finely slice the onions and mince the garlic - sweat in a heavy bottom pan with a drizzle of oil until softened and beginning to brown

Chop the pepper and tomatoes into chunks and add to the onions along with the spices and herbs, leave to soften and begin to color over medium heat. Once softened and fragrant add the stock and wine and leave to simmer

Meanwhile sear the kingfish in a hot non stick pan until brown on both sides, remove from pan and cut into chunks

Once the sauce is reduced down and the vegetables are all tender add the kingfish and simmer gently for 5 minutes until cooked through.
