Chinese smoked salmon starter

Serves 6

Ingredients

  • 200g/7 oz smoked salmon
  • 227g/8 oz bean sprouts
  • 2 tbsp sunflower oil
  • 1 tbsp lime juice
  • Pepper

Method

  1. Oil 6 ramekins then line with smoked salmon. Chop the remaing salmon for step 3.
  2. Boil the beansprouts for one minute, then drain and chop.
  3. Combine oil and juice in a bowl. Add the beansprouts and any remaining salmon and toss well. Cram this mixture into the ramekins.
  4. Turn out and serve.
