  • 2 cod fillets
  • Plain flour seasoned with salt and pepper
  • Desiccated coconut
  • Oil for frying
  • 1 egg, beaten


  1. Pat the fish dry with a kitchen towel then coat lightly with flour.
  2. Brush the egg onto the fish then sprinkle with coconut. Press on lightly.
  3. Fry in hot oil for about 5 minutes.
