Fried Skate with Cream and Caper Sauce
- 4 portions of skate
- Butter for frying
- 50g/2 oz butter
- 6 tbsp cream
- 2 tbsp capers
- Salt and pepper
- Coat the wings in seasoned flour and fry in batches for 3-4 minutes on each side in butter. Keep warm in a moderate oven.
- For the sauce, melt the butter, stir in 3 tbsps of the cream and keep stirring over a medium heat until it reduces and thickens.
- Add the remaining cream, salt, pepper and then the capers.
- Serve skate wings with sauce poured over .
