Fried Skate with Cream and Caper Sauce 
Serves 4


  • 4 portions of skate
  • Butter for frying
  • Sauce
  • 50g/2 oz butter
  • 6 tbsp cream
  • 2 tbsp capers
  • Salt and pepper


  1. Coat the wings in seasoned flour and fry in batches for 3-4 minutes on each side in butter. Keep warm in a moderate oven.
  2. For the sauce, melt the butter, stir in 3 tbsps of the cream and keep stirring over a medium heat until it reduces and thickens.
  3. Add the remaining cream, salt, pepper and then the capers.
  4. Serve skate wings with sauce poured over .
