Grilled mahi mahi
- 2 mahi mahi fillets
- Herbs eg basil, tarragon
- Wash the fillets briefly under running water. Pat dry.
- Brush them (and the grilling surface) with oil, sprinkle herbs onto both sides.
- Grill under a medium heat for about 4 minutes each side. Brush with more oil when you turn the fish over. Serve.
- Squeeze lemon juice over the fish. Marinade the steaks for an hour or two before cooking in simple mixture of wine/wine vinegar/oil and seasoning.
