How to cook your finnan
- In case we didn't do it for you...cut off tail and the napes - the flappy bits at the other end of the fish from the tail.
- Place in a large pan of cold water (or milk and water 50/50). Bring to boil. Turn off and leave for 5 minutes.
- When it is cooked and the flesh is flaky, you will be able to remove the large bone in one piece. YOU SHOULD NOT HAVE TO FIGHT YOUR WAY THROUGH IT. Just run an ordinary (blunter the better) knife up and down the side of the backbone and it will lift out easily (when you've mastered it!) Good luck!
- Serve with poached egg or grilled tomatoes.
