Leah’s Kipper Toasties

Ingredients
2 manx kippers
125ml milk
120g softened butter
Zest of ½ lemon
Small handful of parsley
Black pepper
2 garlic cloves, crushed
4 slices brown bread, toasted
Method
Defrost the fish. Bring the kippers to a boil in a pan with the milk, then turn the heat down and simmer for a few minutes.
Cool and bring the kipper meat off the bones reserving the milk.
Put the meat and other ingredients in a food processor and blend.
Spread on hot toast.
Also great melted on a baked potato!
