Lemon Sole with Brown Shrimp and Garlic & Herb Butter

A simple yet delicious dish. This fine-flaked white fish combined with the firmer brown shrimp and finished with the juicy garlic & herb sauce promises a fantastic melt-in-your-mouth experience.

Lemon Sole with Brown Shrimp and Garlic & Herb Butter

Ingredients

1 Whole Lemon Sole

100g Peeled Brown Shrimps

100g Garlic Confit & Herb Butter

Olive Oil

1 Lemon (Sliced)

Salt & Pepper to season

A Handful of Chopped Parsley

Plain Flour (enough to lightly dust both sides of the lemon sole)

Cooking steps

Step 1

Preheat the oven to 200C. Place the Lemon Sole in an ovenproof dish and rub a handful of flour into both sides. On the upward facing side, rub a generous amount of oil over the fish.

Step 2

Place lemon slices down the middle of the fish and then scatter the Brown Shrimp on top. Add generous knobs of garlic butter around the dish, then season with chopped parsley, salt and pepper.

Step 3

Bake in the oven for approximately 12-15 minutes. To check if it is cooked, place a knife into the thickest point of the fish, when done the fish will easily flake away from the bone.

Step 4

Make sure to drizzle the excess melted butter over the cooked fish. Can be served with potatoes and vegetables. Enjoy!
