Mackerel with Lime and Chilli

- 4 mackerel
- 1 lemon, zest and juice
- ½ tbsp chilli sauce
- 1 tsp soft brown sugar
- Salt and pepper
- ½ tbsp parsley, chopped
- Make three deep slashes in both sides of each mackerel. Put in a shallow dish.
- Combine lime, chilli sauce, sugar and seasoning. Pour over the fish, rubbing into the slashes. Leave for 30 minutes
- Preheat grill to medium high. Transfer mackerel to grillpan. Grill for 10 minutes, brushing frequently with the marinade and turning the fish over after five minutes. Garnish with parsley.
