Panko Coconut Prawns

Ingredients

400g Peeled Black Tiger Prawns

tbsp Honey

85g Sugar

1 Lemon

2 Large eggs

384g Plain flour

250g Shredded coconut

250g Panko bread crumbs

Salt

Pepper

Vegetable Oil

Cooking steps

Step 1

Combine the honey, sugar, lemon zest and juice, and 1/2 teaspoon black pepper in a medium saucepan; bring to a simmer over medium-high, stirring constantly. Simmer, stirring constantly, until sugar dissolves, about 2 minutes, then set aside.

Step 2

Stir together flour, salt & pepper into a shallow bowl. Whisk together eggs, 1 cup water, and remaining 1 tbsp of plain flour in a separate bowl until just combined.

In a third bowl stir together shredded coconut and panko breadcrumbs.

Step 3

Begin by coating the prawns in salted flour mixture; shake off excess. Dip into egg batter; let excess drip off and then the coconut mixture. Repeat process using remaining prawns. Begin by coating the prawns in salted flour mixture; shake off excess. Dip into egg batter; let excess drip off and then the coconut mixture. Repeat process using remaining prawns.

Step 4

Pour oil to a depth of 3 inches into a pan, over a high. Working in about 3 batches, fry prawns in hot oil until golden brown, 3 to 4 minutes per batch. Transfer cooked prawns to a plate lined with paper towels to drain. Let cool slightly, about 2 minutes. Drizzle with honey mixture.
