Roasted Cod with Cherry Tomatoes and Herbs


2 cod fillets
2 tbs butter
1 tsp garlic paste or minced garlic
salt and black pepper
10 cherry tomatoes
¼ cup chopped herbs, eg basil, parsley, chives, and tarragon


Preheat the oven to 375F.
Spray a baking dish with a little olive oil. Place the cod fillets in the baking dish. Melt the butter in a small bowl, and stir in the garlic. Pour the garlic butter over the fish, then season it with salt and black pepper.
Add the cherry tomatoes and sprinkle the herbs over the fish, then cover the dish with foil.
Roast for 20 minutes, removing the foil after 10 minutes.
