SALMON SKINS QUICKLY NAKED IN THE OVEN
"Yes, these are a sushi speciality. But they cross boundaries. Anyone who has ever enjoyed the skin on their fillet should try this recipe. Our skins have been descaled (but you might want to check. If you see any scales, remove by scraping with a knife (from the tail end - AGAINST the lie of the scales)."
- Heat oven to 190C.
- Cut your salmon skin into crisp-sized pieces.
- Sprinkle them with olive oil and a touch of salt. Toss to cover both sides.
- Arrange on a baking tray, skin/outside upwards.
- Put in oven for about 10 minutes. (Experiment with how hard and crispy you like them.)
