Seared Salmon with sun dried tomatoes, artichoke and capers

Crispy on the outside and tender on the inside this pan seared salmon is combined with tomatoes, artichoke and capers for a fantastic taste.

Seared Salmon with sun dried tomatoes, artichoke and capers

An easy salmon steak recipe, seared in the pan in only a few minutes and added to a bed of spinach with sun-dried tomatoes, artichokes and capers.

Ingredients

2 salmon fillets

2 cloves of garlic finely sliced

75g jarred sun dried tomatoes

75g jarred roasted artichokes

30g capers

2 large handfuls of spinach

200ml of single cream

Handful of fresh basil roughly chopped

olive oil

salt & pepper

Cooking steps

Step 1

Season the salmon with some salt and pepper then sear salmon on skin side in hot pan until crispy - remove to plate

Step 2

In the same pan sauté the garlic, sun-dried tomatoes, artichokes and capers in a little olive oil

Step 3

Add the spinach after 4 minutes and wilt

Step 4

Add the salmon back into the pan skin side up along with the cream and simmer away for 5-7 minutes until the salmon is just cooked through.
Finish with the basil and a good pinch of salt and pepper.
