Chilli Mackerel with Courgetti
This recipe is a wonderful way to pack a lot of flavor into a meal and it's healthy too! With courgetti replacing pasta, it really is the best of both worlds; absolutely delicious and perfectly healthy.
BUY MACKEREL FILLETSWhat you’ll need
- 4 mackerel fillets
- 1 tbsp of chilli flakes
- zest of 1 lemon
- olive oil
- 3 courgettes
- bunch of parsley
- watercress

Step 1
Remove the pin bones from the mackerel by running a knife either side of the spine, take hold of the thicker end of the fish and pull out the spine firmly but gently. Rub the fish with the lemon, chilli, a drizzle of olive oil and a pinch of salt and pepper.
Step 2
Using a spiralizer, create the noodles with the courgette.
Step 3
Heat a non stick pan to a high heat and sear the mackerel skin side down until crispy and nearly cooked through, flip over and take off the heat.
Step 4
Whilst the mackerel cooks, stir fry the courgettes until just hot through. Stir the parsley through the courgetti and top with the mackerel.
