Sole in Marsala

Ingredients
1 pack lemon sole fillets
50g/2oz butter
Sea salt and black pepper
125ml/5fl oz marsala
Parsley chopped fine
Method
1 Arrange skinned and boned sole fillets in a well buttered ovenproof casserole dish, sprinkle fish with salt and pepper. Pour marsala over and dot with remaining butter.
2 Cover and cook in a moderately hot oven 190C/375F/Gas 5 for 20 minutes.
3 Serve topped with parsley.
