Spicy King Prawns
100 grams butter
2 tablespoons chilli paste
1/2 lemon (cut into chunky slices)
1 handful chopped parsley
4 garlic cloves
2 tablespoons olive oil
10 new potatoes (boiled)
Mix together the butter, chilli paste and olive oil.
Boil the potatoes until soft, drain and add butter and parsley.
Remove the shells from the prawns if you like – we prefer to leave them on.
Pour the spicy mixture over the prawns in a mixing bowl, squeeze in a couple of slices of lemon, mix and leave for at least 30 minutes.
Fry the chilli butter covered prawns until they turn completely pink. Don’t overcook them or they’ll go tough and chewy.
