After logging the surging popularity of this dish, we asked Chef Tim to put together a champion no-compromises salmon-en-croute. He offered us two versions - one with mushrooms, the other with a pea-purée base. The mushrooms narrowly won. Hand-made can only be expensive, so it had to be fan*****ytastic. We use large cuts of our Scottish salmon, dress them, encase them, to give you this ready to go meal for 2 or the family. We hope you enjoy it as much as we did!
