In Spain and Portugal, bunyols or bunuelos de bacalao probably outrank fish fingers. But salt cod never entered the UK mainstream so they're all but unheard of here, although Rick Stein and James Martin.are doing their best to change that. Nevertheless, we have yet to encounter a Brit who didn't think these are pretty moreish. They deliver the intriguing "hmm I know it but it's different" taste of salt cod, but pretty mildly and all wrapped up in nice breadcrumbs. Ideally you'll deep fry these but attentive shallow frying also works.
