Bottarga is compressed roe of the thin lipped grey mullet (thick-lipped just can't cut it). It's a rich delicacy - made all around the Mediterranean - best eaten grated over pasta or in tiny slices drizzled or blended with olive oil, cayenne pepper and lemon juice, and served with cold white wine as a pre-prandial nibble. This Sardinian version comes vac packed in smallish sacs and is vac packed - perfect as a straightforward ingredient. The Greek is showier, pricier and packaged to kill. This product chilled (not frozen) and will have a best before date at least a month ahead.
