Often considered “foie gras of fish”, Ventresca is the belly area of the tuna that is high in oil content. The high oil content gives it a creamier flavour than typical tinned tuna. The meat is presented in the tin in long white flakes that separate apart beautifully. It is the finest and most tender part of the tuna and is packed by hand in tins. This is very similar to the Ortiz ventresca de bonito. The quality is on par and the price is a little bit more attractive. It's also unique as it's using Irish caught albacore tuna.
