Wild prawn tails

These are the tails from wild Madagascan prawns. They're still in their shells. You'll get 8-12 tails per pack including some impressively large ones. They have not been deveined but that only takes a minute - just use your kitchen scissors to cut the back from top to tail (or just be lazy - it isn't going to hurt you!).

Recipe

Classic Mediterranean grilled prawns

 

This recipe is for prawns in their shells (whole or tails). You'll need about 150g tails per person or twice that weight if using whole prawns. You will also need:

 

Olive oil

Sea salt

A lemon

 

1 Defrost the prawns. If sizeable, snip down top of tails and remove 'vein'.

2 Dry them then rub oil thoroughly into them.

3 Press the prawns into a sprinkling of salt. Make sure the salt adheres.

4 The grill or BBQ should be very hot. Put the prawns on or under the heat. Cook for about 4 minutes, turning after 2.

5 Serve with lemon quarters and a salad. Diners should apply the lemon after peeling the prawns.
