Red mullet big enough to produce decent-sized fillets are rare indeed - so we regret that this item is often out of stock. Naturally, this is always cold water red mullet. Recipe

 

Suggestion 1: Red mullet with sweet chilli sauce - Gordon Ramsey

 

 

Suggestion 2: Panfried red mullet on crushed potatoes Serves 2
1 pack red mullet fillets (c 250g)
Plain flour, seasoned, for coating
350g/12oz new potatoes, scraped
4 tbsp extra virgin olive oil
25g/1oz watercress sprigs or rocket, roughly chopped
Balsamic vinegar & olive oil to serve

1 Cook the potatoes until tender. Drain well and return to the pan with the olive oil.
2 Lightly crush each potato with the back of a fork. Season well and keep warm.
3 Heat 1 tbsp of oil in a frying pan until hot. Lightly dust the fillets with flour. Fry for 1-2 mins each side.
4 Stir the watercress into the crushed potatoes and divide between 2 warmed plates.
5 Top with red mullet fillets. Drizzle a little balsamic vinegar and olive oil over all and serve.
