From Norway’s finest : large fish line-caught on day boats. But the special feature of Skrei is that the cod is caught in the spring on its long food-free journey to its spawning grounds, so it’s very lean and super-fit and you can see this in its bright white flesh. Norwegians are very proud of Skrei, which is subject to a highly detailed sustainability regime. There are so many recipes out there for how to use skrei cod, but one of our favorites is to roast it and serve with spring onion mash and a caper and lemon butter sauce. If you wanted something a bit different, maybe try it pan-fried with cannellini beans and squid. The difference between these fillet portions and a fillet steak is that the portions are cut from the tail end of the fish, so they taper towards one end and can be a bit thinner, whereas a fillet steak is cut from higher up.

Sustainability - our rating 9/10
Skrei cod are line caught off the coast of Norway. Line caught cod caught in Norwegian waters are described as ‘best choice’ by the Good Fish Guide. The cod that are marketed as skrei are large mature fish. Due to the ‘brand’ of ‘skrei’ and the price premium, there is extra industry incentive to continue closely managing this cod stock.
