Stone bass tastes quite similar to sea bass. It is also known as meagre and corvina, perhaps you've seen it on the menu in Greece or Turkey? The tailpiece (joint) is ideal for oven baking. We suggest wrapping the joint in tin foil with some lemon, herbs and season it. A 450g tail will bake in the oven in foil in about 20-25 minutes. The meat should smoothly shear off each side of the bone to make two moist servings.
