Our hand cut sword steaks are produced by us from large fresh fillets rushed by air from the Indian Ocean at considerable expense. Undoubtedly a little bit naughty in terms of food miles. As an alternative, we offer these steaks from a far eastern processor who cuts and freezes them before dispatching to the UK by sea, which is much more economical. Normally very good but perhaps not always trimmed quite as well as our own.
