We offer two kinds of salmon skin. The first is from "deep-skinned" fish when we have been producing sashimi. Deep skinning removes not just the skin but the thin layer of dark meat just inside it (so we end up with perfectly pink sashimi). If you want meaty skin, go here. On this page, we are offering just the skin (from salmon processed into skinless salmon steaks which include the dark meat a well as the pink). And yes, both kinds of skin are descaled.
