It’s the same belly muscle, but from a less exalted fish, the yellowfin tuna. Excellent eating by any standards, and not much more than half the money. (It's called atun in Spain but atum in Portugal, where our supplier is located.) Upon opening the tins you will discover finely presented long streaks of cooked tuna belly meat in quality olive oil.
