Our ventresca de bonito customers know that the finest way to savour this gem of a product is to separate the slices and savour them one by one. Each slice is an experience to die for. (Well, you know...) So imagine my excitement upon discovering that these guys - El Capricho - they sell a tin of separated slices. Glorious wide, flat, perfect slices - typically ten in a tin. AND - hold your HAT - for less money than a standard separate-it-yourself tin of VdeB! That said, we need to point out that this is not in fact ventresca, but the neighbouring cut. Some say it's not in quite the same league, but if not, it's a commendable Number 2.

This species of tuna (only 5% of the world catch) has many names: we call it albacore but it's also known as bonito del norte, atun blanco, white tuna and germon and that just covers western Europe. It tastes fabtastic in every language.
