White miso paste is made from soya beans fermented with rice. It has a sweet and fulsome flavour which is used in many dishes and perhap most famously in Nobu's black cod recipe. Add to boiling water to create a soup or stock, or mix with soy, ginger, rice vinegar and oil to create a delicious marinade.
