These are traditional farmed salmon from Scotland. They’re cleaned and descaled, so are ready-to-go. A 2 kilo fish will give you 6 generous or 18 modest portions. A 2.4kg fish will just about squeeze into a standard 24 inch fish kettle. For larger fish, you’ll need to remove the head and tail.  But if your fish weighs over 4kg, you’ll be cooking it in your oven, wrapped in foil. This method works very well.
