The humble sprat (aka brisling, especially in Scandinavia) is basically a big whitebait. The big question is... will you eat the guts and head and all? Some do some don't, but those who don't spend only a very few minutes cleaning them under a running tap. Then coat in flour and shallow fry for 2 minutes. Delicious.
