These are fine whole sides of wild sockeye salmon. They have a stunning orange/red appearance. The fat content of wild sockeye salmon is very low. You can tell this by the lack of white lines through the flesh. Because the fat content is lower you have to cook it for less time than you would typically shop-bought farmed Atlantic salmon. The fillets have been scaled and pin boned so are ready to cook. The sizes start from around 600g which would serve 3-4 people.
