Arbroath smokie with latkes
A hearty Arbroath Smokie breakfast or brunch recipe. Simple but full of the most loved flavours, crispy latkes with a poached egg.

- 2 arbroath smokie
- 100g butter
- 2 medium potatoes, peeled
- 2 eggs
- 1 brown onion
- 100g breadcrumbs

Step 1
Preheat the oven to 180’c and place a pan on water on a medium heat and bring to a gentle simmer
Step 2
Meanwhile grate the potatoes and onion and place on a clean tea towel, gather the sides of the tea towel around the vegetables and squeeze as much moisture out of the mix as you can and place in a bowl with the egg and breadcrumbs. season and mix thoroughly to form thin patties. Fry on medium heat until golden.
Step 3
Whilst they fry, place the Arbroath smokie in an oven dish with the butter on top and bake for 6-10 minutes until hot through.
Step 4
Gently poach the egg until just soft and serve on top the potatoes latkes along side the smoky
