Beef Tartare with Sea Urchin and Miso

What you’ll need
- 300g fillet of beef
- Handful of cornichons
- 1 tbsp capers
- 1/2 shallot
- 1 tbsp parsley, finely chopped
- 2 sea urchin roe
Finely dice the beef, shallot, capers and cornichons.
Combine with the parsley and a good pinch of salt and pepper.
Using a metal plating ring divide the mixture between two plates forming a neat circle on each plate.
Top with the sea urchin roe and serve immediately.
