Chilli Mackerel with Courgetti
This recipe is a wonderful way to pack a lot of flavor into a meal and it's healthy too! With courgetti replacing pasta, it really is the best of both worlds; absolutely delicious and perfectly healthy.BUY MACKEREL FILLETS
What you’ll need
- 4 mackerel fillets
- 1 tbsp of chilli flakes
- zest of 1 lemon
- olive oil
- 3 courgettes
- bunch of parsley
Remove the pin bones from the mackerel by running a knife either side of the spine, take hold of the thicker end of the fish and pull out the spine firmly but gently. Rub the fish with the lemon, chilli, a drizzle of olive oil and a pinch of salt and pepper.
Using a spiralizer, create the noodles with the courgette.
Heat a non stick pan to a high heat and sear the mackerel skin side down until crispy and nearly cooked through, flip over and take off the heat.
Whilst the mackerel cooks, stir fry the courgettes until just hot through. Stir the parsley through the courgetti and top with the mackerel.
