Crayfish party style with beetroot and potato salad
This is a wonderfully simple recipe to whip up for that dinner party you planned with your friends. Who can resist a recipe that says serve it with plenty of wine??
BUY CRAYFISH IN DILL BRINEWhat you’ll need
- 1kg pack of Crayfish in dill brine
- 500g Cooked beetroot
- 100ml Mayonnaise
- 100ml Plain yogurt
- Bunch of chives
- Zest of 3 lemons
- 500g New potatoes
- Dill to serve

Step 1
Boil the new potatoes until softened and combine in a large bowl with the beetroot, mayo, yogurt, chives (finely chopped), lemon zest and a good pinch of salt and pepper.
Step 2
When ready to eat stir fry the crayfish in a hot pan until hot through. Plate on beds of dill with crusty bread and plenty of wine.
