Crispy Cod Bites with Lemon Mayo

- 200g Wild Atlantic cod misshapes
- 2 tbsp plain flour
- 1 egg, beaten
- 4 tbsp breadcrumbs (panko or regular)
- Salt and pepper
- Oil for frying
- 3 tbsp mayo
- Juice of ½ lemon
- ½ tsp Dijon mustard (optional)
