FishRJumpin Smoked Salmon & Poached Egg on Sourdough with Hollandaise

What you’ll need

  • 4 slices sourdough bread
  • 6 eggs (2 egg yolks for sauce)
  • 4 slices smoked salmon
  • 1 avocado, sliced
  • Lemon wedge (for serving)
  • Fresh dill or microgreens (optional)
  • 100g melted butter
  • 1 tbsp lemon juice
  • Salt and a pinch of cayenne (optional)

Let's Cook!

Step 1

Whisk yolks + lemon juice in a bowl over simmering water.

Step 2

Slowly add melted butter while whisking until thick and smooth. Season and keep warm.

Step 3

Simmer water, add a splash of vinegar.

Step 4

Crack eggs into the water gently, cook ~3 minutes. Remove and drain.

Step 5

Toast the sourdough.

Step 6

Top with avocado, smoked salmon, and poached egg.

Step 7

Spoon on hollandaise sauce.

Step 8

Garnish with dill or greens, add a lemon wedge.
