What you’ll need

  • 1/4 cup sake
  • 1/4 cup mirin
  • 1/4 cup white miso paste
  • 3 tbsp granulated sugar
  • 4 black cod fillets (4-6 oz each)
  • Kosher salt
  • Cooking spray or 2 tbsp vegetable oil
