What you’ll need

  • 2 organic Scottish salmon fillet steaks (skin on)
  • Salt and black pepper
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 2 tbsp unsalted butter (softened)
  • 1 garlic clove, minced
  • 1 tsp fresh dill or parsley, chopped
  • Zest of ½ lemon
  • Pinch of salt
  • 300g baby potatoes
  • 1 tbsp olive oil
  • 1 small bunch broccolini
  • 1 garlic clove, thinly sliced
  • Juice of ½ lemon

Step 1

Prepare the herbed butter Mix softened butter with garlic, herbs, lemon zest, and a pinch of salt. Set aside.

Step 2

Boil the potatoes & prep the broccolini Boil the potatoes in salted water for 10–12 minutes until tender. In the same pot (or another pan), briefly steam or boil broccolini for 3–4 minutes until bright green. Drain both.

Step 3

Pan-fry the salmon Season salmon with salt and pepper. In a pan, heat olive oil and butter. Sear salmon skin-side down for 4–5 minutes, then flip and cook 2–3 more minutes. In the last minute, add a spoonful of herbed butter on top to melt.

Step 4

Finish the sides Gently crush the cooked potatoes with a fork, drizzle with olive oil, and season. Quickly sauté broccolini in olive oil with sliced garlic, then finish with lemon juice.

Step 5

Plate and serve Arrange potatoes and broccolini on the plate, top with salmon, and add a dollop of extra herbed butter if you like. Garnish with lemon wedges and fresh herbs.
