Salmon En Croûte

Salmon en croûte is a family favourite. Succulent salmon and spinach encased in a crisp puff pastry - what's not to like!

What you’ll need

  • 800g Whole Organic Salmon Fillet
  • 1 onion
  • Olive oil
  • 4 cloves of garlic
  • 500g frozen spinach
  • 2 sheets of puff pastry
  • 4 salmon fillets
  • 2 large eggs
  • 1 lemon

Step 1

Peel and chop the onion, cook in a large pan on a medium heat with some olive oil until the onions turn transparent. Finely chop the garlic and grate the lemon, then add into the pan and cook until everything has softened. Stir in the spinach and cook for 5 mintues with the lid on, then take the lid off and cook for a further 5 minutes - season to taste. Unroll one of the sheets of puff pastry and place onto a lined baking tray, then spread over evenly the spinach mixture, making sure that you leave a border of pastry free. Place the salmon fillets on top in a central position. Unroll your other sheet of pastry and place it over the top to encase everything inside. With a fork, crimp the edges of the pastry to seal your salmon en croute. Beat the eggs and brush it on top of the pastry. Bake in the oven for 30 minutes or until golden, then serve immediately. Enjoy!
